Hearth & Grain Bakery
Austin, Texas, USA
We started Hearth and Grain with one wood-fired oven and a stubborn belief that bread should be simple. Flour, water, salt, time. Each morning we mix, fold, and shape by hand, then bake in batches small enough that we know every loaf by its crust. The flour comes from a mill just up the road, so the wheat that becomes your sandwich was growing in Texas soil a season ago. Come early, the cinnamon morning buns rarely make it to noon.

Their story
This is baked in the wide ranchland and long growing season of Texas, close to the mills and farms that supply it. Nothing is rushed to fit a calendar.
What makes it different: the ingredients are sourced close to home, and it is grown to certified organic standards, without synthetic pesticides.
Hearth & Grain Bakery is a small bakehouse where the baker knows every loaf.
